Concept: Fresh, raw or gently prepared dishes that feel bright and uplifting.
•Fennel, apple & radish carpaccio with lemon vinaigrette and toasted almonds
•Pickled courgette ribbon with mint cashew cream, gooseberry and puffed quinoa
🔥 Fire – Bold, warming, energising
Concept: Spiced, roasted, smoky flavours. Foods that feel vibrant and fuel you.
•Charred harissa aubergine with garlic tahini drizzle and dukkah
•Smoky roasted cauliflower with paprika aioli and padron pepper
🌊 Water – Fluid, cooling, sea-inspired
Concept: Hydrating, mineral-rich dishes. Representing the marine life.
•Watermelon tartare, black sesame, micro coriander, mustard foam, served in a cucumber boat
•Tempura banana blossom, tartare sauce, samphire
🌍 Earth – Grounding, nourishing, rooted
Concept: Hearty, umami-rich, soil-grown ingredients.
